Zucchini Casserole - Pam Hill

4 cups zucchini, cubed - cook 3 minutes and drain.

Mix together:

1/2 chopped green pepper
6 slices cooked bacon, crumbled
1 and 1/2 cups shredded cheese
1/3 cup chopped onion
2 ripe tomatoes chopped or 2 cups canned tomatoes
1 tablespoon sugar
1/2 teaspoon salt

Alternate layers of zucchini with mixture in baking dish, beginning with zucchini. Top with 1/2 cup cracker crumbs and 2 tablespoons melted butter.

Bake at 375 degrees for 35 minutes.
